Collards

Collards, << KOL uhrdz, >> are the leaves of the collard plant, a vegetable related to the cabbage. The collard resembles kale but can grow in warmer climates (see Kale ). It is usually grown in the southern United States. The plant may grow 2 to 4 feet (61 to 120 centimeters) tall. In warm climates, the seeds may be planted in September and the leaves picked the following spring and summer. Seeds may also be planted in summer and the leaves picked the following winter. Collards are cooked and eaten. They provide a rich source of vitamin A.
