Hominy

Hominy, << HOM uh nee, >> is a food made from hulled corn. The corn is soaked in a weak solution of sodium hydroxide (also called lye). This causes the kernels to puff up. The skins come free and float to the top. After the kernels are washed, they are ready to be cooked. Hominy has been a favorite dish in the southern United States since pioneer days. It may be boiled or fried, and is usually served with meat. Some kinds of grits, a porridge popular in the southern United States, are made from ground hominy.
