Cow parsnip is a large, coarse plant which belongs to the parsley family. It grows from 4 to 8 feet (1.2 to 2.4 meters) high and has large, hairy leaves. Its small white flowers grow in huge clusters. The plant becomes a troublesome weed when allowed to grow in damp soil near water. The cow parsnip may be eaten in place of celery, but it has usually been used as fodder.
