Emmer is a type of wheat. Farmers grow emmer in dry and mountainous regions where common wheat will not grow. Emmer grain has a brittle central spike. When farmers thresh it, the stiff, leaflike parts that enclose the grain remain. The hulls may be black or white. People grind the grain into flour for bread, or feed it to livestock.
