Carotene is an orange-red pigment found in such plants as carrots, spinach, broccoli, and sweet potatoes. When such plants are eaten, the liver converts the carotenes to vitamin A. Vitamin A is essential for the growth of bones and teeth. It also helps to keep the skin healthy.
Carotene is one of a group of plant chemicals called carotenoids. Some studies suggest that a diet rich in carotenoids may reduce the risk of cancer and certain other diseases. Carotenoids are antioxidants, which may protect cells against certain types of cell damage (see Antioxidant ).
